🍮 Simple Homemade Custard

Ingredients:
• 2 cups milk
• 3 egg yolks
• ⅓ cup sugar
• 2 tbsp cornstarch
• Pinch of salt
• 2 tsp vanilla

Directions:

1. Whisk sugar, cornstarch, and salt in a saucepan.
2. Slowly whisk in milk.
3. Heat until steaming.
4. Temper egg yolks with a little hot milk, then whisk back into pan.
5. Cook 2–4 minutes until thick and silky.
6. Remove from heat and stir in vanilla.
7. Chill and enjoy!

🍫 Chocolate Version:
Add 3 tbsp unsweetened cocoa powder with the sugar and cornstarch before adding the milk.

Homemade Hollandaise Sauce 🌿
A simple, nutrient-rich sauce made from real whole foods.
Ingredients:
3 large egg yolks
1 Tbsp fresh lemon juice
½ cup (1 stick) butter, melted

Pinch of white pepper (or black pepper)
Optional: ½ tsp Dijon mustard (helps stabilize the sauce)
Directions:
Whisk egg yolks and lemon juice together until slightly thickened.
Place bowl over a pot of gently simmering water (double boiler method), making sure the bowl does not touch the water.
Continue whisking while slowly drizzling in melted butter until the sauce becomes thick and creamy.
Season with salt and pepper.
If it gets too thick, whisk in a teaspoon of warm water until silky again.
Serve over:
